The Crocodile Farm, near Cairns


No visit to Cairns is complete without seeing a crocodile and the best place to see a huge croc is at Hartleys Crocodile Farm. The Hartley’s Creek crocodile farm is located halfway between Cairns and Port Douglas. It’s no more than 30 minutes from Cairns by car. It’s probably cheapest if you organise a few others from the house and rent a car from Rent-A-Bomb next door to the house.

For no more than $40 a day you can drive yourselves. Or if you’d prefer not to drive, there are a lot of tour companies that will organise the day for you including a pick-up from the house.

Hartley’s is an actual working crocodile farm where the croc’s skins and meat are made for export. The cost for entry into the farm is $32 for adults($28.80 for sleeping guests) which is open 8.30am – 5.00pm. It’s well worth the money.

There’s a great crocodile show that has been running since the 1930’s, you’ll enjoy the violent feeding times where the crocs chow down the chicken carcasses. You’ll also learn about their natural habitat and enjoy the adrenalin of being up close and personal with some of Australia’s biggest salty crocodiles. The cruise on the lagoon is also fantastic where you’ll see lots more crocs.

The big tip from Ian is to go during the week if you can as it’s a lot less crowded. Remember to take your camera as you’ll capture some fantastic live feeding shots of the big guys with mouths open.

The Sydney Adult Ghost Tour


Not sure what to expect from an attraction such as this? Well, it’s definitely not for the faint hearted. The adult ghost tour is primarily for 18-30 year olds.

The North Head Quarantine Station Ghost tour is available 8pm Wednesday, Thursday, Saturday & Sunday. It runs for 2.5 hours and it costs Sleeping with the Enemy guests only $41.80 (normal price is $44) or $34.20 for students. This special price is only available Wednesday, Thursday and Friday. This includes entry, a walking guide and a light supper. Bookings are essential by phoning 9977 5145. To get to North Head, we’d recommend a ferry to Manly wharf and then grab a cab for no more than $10.

Set on one of Sydney’s most treasured heritage sites, it has some very interesting history. Not only have fun on the ghost tour but learn that the quarantine station was the site used from the 1830s to 1984 for migrant ships arriving in Sydney with suspected contagious diseases. The ships stopped inside North Head and off-loaded passengers and crew into quarantine to protect local residents from becoming sick. To understand what these people went through, the tour will enlighten you.

Here’s a bit about the tour from the website:
Running for 15 years, this evening storytelling tour winds its way around the Q Station, telling tales of unexplained phenomena.

Join the storyteller, take a lantern and walk into buildings to hear stories of other-worldly experiences and the strange things that have happened to former tour participants and visitors to the site. At the Quarantine Station, people were isolated from their past and future homes and trapped in a transitory space for an undefined period. Listen to their stories as you explore our most haunted spaces such as the hospital, morgue, and the shower block.

Things to look or listen out for on your ghost tour are unusual sounds such as music, the clattering of pots and pans, smells such as lemons or potatoes and very cold spots.

Apparently the spooky stone cottages, the hospital mortuary and cemetery are freaky and the acid room is a sure place to shit yourself.

The best tip about the tour is to know that it’s a walking tour which involves steep inclines and declines at times - please ensure that you wear enclosed shoes. Also take a jacket as it gets cold up there in the night hours.

Mountain Biking, Cairns


Mountain Biking is a sport currently experiencing renewed interest and rapid growth with its recent inclusion in the Olympic Games.

Cairns has a lot to offer to the Mountain Bike (MTB) world with many of the world’s fastest professional riders choosing to live and train here.

The Cairns Mountain Bike Club has recently constructed The Smithfield Mountain Bike Park, a riding park that was designed to support a world cup event in the near future. Riders of all abilities are catered for whether you are an inexperienced novice or a weekend warrior. The Park includes tracks designed for all 3 disciplines of Mountain Biking:
  • Cross Country
  • Downhill
  • MountainX
The Smithfield Mountain bike park has been designed with both leisure and racing in mind and the local club has organised social rides and race meets scheduled regularly.

The site is located at McGregor Road Smithfield (on the way to the Bungee tower) and is open all hours, so ride at night if you’ve got a light.

Hot Air Ballooning – see the Cairns sunrise


Hot air ballooning is a romantic and soft adventure experience which is considered by many to be the best way to see the gorgeous North Queensland sunrise. Balloons gently rise from the ground at daybreak. The view from a hot air balloon is spectacular, and the experience is one you will remember.

What makes hot air ballooning so magical is the balloons float gently with the wind, and for this reason ballooning is conducted at sunrise when the wind is at its calmest. The sensation of lifting off the ground is exhilarating, in many ways it feels like your body is flying by itself. Some guests have described their ballooning experience as "the best morning they've had in Australia" .

In Cairns, hot air ballooning operations are conducted among the rolling hills of the Cairns Highlands at various locations near the township of Mareeba. Of the many hot air ballooning locations around the world, the Cairns Highlands climate is considered to be the most ideal for hot air balloons as pilots are able to launch their hot air balloons almost every day of the year. The mountains of the Great Dividing Range act as a wind buffer against the fresh sea breezes resulting in Cairns having less cancelled flights than any other location in the world.

Two operators conduct hot air balloon flights from Cairns, Hot Air Cairns and Raging Thunder. Both companies have beautiful balloons, provide breakfast with your flight, transfers to and from the house and take mid-flight photos so you can take home a gorgeous photo of yourself in the air.

Glebe Foreshore Walk


The Glebe Foreshore Walk from Bicentennial Park (in Glebe) to the Sydney Fish Market opened at the end of 2006 after $15 million worth of digging, bulldozing, and paving.

The result is fantastic public access to a very pleasant stretch of the harbour from Rozelle Bay to Blackwattle Bay, and a great way to spend a couple of hours on a sunny afternoon.
Start at the western end of Rozelle Bay, walk all the way to the Sydney Fish Markets (around 1 hour), stop for some great seafood and then lazily wander back.

If you are driving the best place to park is in the Chapman Road Carpark which is at the western end of Bicentennial Park. 

You can also catch the light rail from the city or Darling Harbour to either the Jubilee Park, or Rozelle Bay stop. See where they are in relation to the foreshore on this map.

Once you reach the foreshore simply follow the path east and you can't go too far wrong.

Note that near the end of the walk you will need to cut past the Glebe Rowing Club and through a school (and through their basketball court). There is a sign saying that access to the shortcut is blocked on weekdays until 4pm.

You will also need to walk along Bridge Road for a short way (a couple of hundred metres) to reach the Fish Markets.

If you caught public transport to the start of the walk you can hop on a train at the nearby Wentworth Park Station, or wander back to Rozelle.

The Chinatown Night Market


The Chinatown Night Market is held every Friday from 4pm to 11pm in Dixon St between Goulburn and Hay. It’s really interesting and has lots of yummy food.

Chinatown is a great place to visit in its own right with many interesting restaurants to be found on Dixon and along the side streets. The night market just provides another excuse.

There are over 40 stalls selling everything from clothes and jewellery, to samurai swords and art, and over 10 stalls of different asian foods.

It's a great chance to get a few friends together, wander around the markets, and then settle down in a restaurant to have dinner (if you've not already stuffed yourself silly on market food).

The market is free and definitely worth a visit!

Spaghetti Bolognaise


Ingredients
(Serves 4)
 

1 tablespoon olive oil
1 medium brown onion (150g), chopped finely
1 clove garlic, crushed
500g minced beef
410g can tomatoes
½ cup (140g) tomato paste
½ cup (125ml) dry red wine
¼ cup (60ml) beef stock
½ teaspoon sugar
1 tablespoon finely shredded fresh basil
2 teaspoons fresh oregano
375g spaghetti


Method

Heat oil in large saucepan; cook onion and garlic, stirring, over medium heat until onion is soft.

Add mince to pan; stir constantly over high heat until well browned.

Add undrained tomatoes, paste, wine, stock and sugar; crush tomatoes using potato masher. Bring to a boil; reduce heat. Simmer, covered, about 30 minutes or until mince is tender and mixture thickened slightly. Stir through herbs.

Meanwhile, cook pasta in large saucepan of boiling water, uncovered, until just tender; drain.

Serve sauce spooned over pasta.

Add grated parmesan, if desired.
